Ingredients

  • 2½ to 3 lbs cauliflower (about 2 small heads), cut into medium florets
  • 3 tablespoons extra virgin olive oil, divided
  • ¾ teaspoon ground turmeric, divided
  • Kosher salt
  • Freshly ground black pepper
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 teaspoons Thai roasted red chili paste (adjust to taste)
  • 1 quart (4 cups) low-sodium chicken broth, plus more if needed
  • 1 (15 oz) can full-fat coconut milk
  • 1 tablespoon grated fresh ginger
  • Juice of ½ lime, plus more to taste
  • Small handful cilantro leaves, finely chopped, for garnish

Instructions

  1. Preheat the oven to 425°F (218°C). Line a sheet pan with parchment paper. In a large bowl, toss the cauliflower florets with 2 tablespoons of olive oil, ½ teaspoon ground turmeric, ½ teaspoon kosher salt (or to taste), and a few grinds of black pepper. Spread in a single layer on the sheet pan and roast for 20–25 minutes, flipping once, until tender and lightly caramelized.
  2. While the cauliflower roasts, heat the remaining tablespoon of olive oil in a large soup pot over medium heat. Add the diced onion, the remaining ¼ teaspoon turmeric, and a pinch of salt. Sauté for 3–4 minutes until softened and translucent.
  3. Add the garlic, carrots, and celery and continue to cook for 10–12 minutes, stirring occasionally, until the vegetables are lightly caramelized. Stir in the Thai chili paste to coat the vegetables.
  4. Pour in ¾ cup of the chicken broth, scraping the bottom of the pot to loosen any browned bits. Cook until the liquid is reduced by about half. Add the remaining broth, grated ginger, and the roasted cauliflower to the pot. Bring to a boil, then reduce heat and simmer for 10–15 minutes, until all vegetables are very tender.
  5. Carefully transfer the soup in batches to a high-powered blender and puree until smooth, adding additional broth if needed to reach your desired consistency. Alternatively, use an immersion blender until fully blended.
  6. Return the pureed soup to the pot over low heat. Whisk in the coconut milk and stir in the lime juice. Taste and adjust seasoning with salt, pepper, and more lime if desired.
