Paneer Fruit Lassi Recipe: Creamy Indian Yogurt Drink with Paneer and Fresh Fruit

Lassi is a traditional Punjabi beverage made from yogurt, water and sometimes spices or fruit. When prepared with fruit and sugar instead of spices, it becomes a fruit-flavored lassi. Fruit lassis are refreshing and versatile — common varieties include mango, banana, strawberry, grape and papaya. This recipe combines several fruits for a rich, colorful lassi that works well as a cooling drink or a light dessert.

Ingredients

  • 1 cup paneer (optional — can be omitted or replaced with a spoonful of cream for richness)
  • 2 cups yogurt (curd), well chilled
  • 10 green grapes, halved
  • 5 pieces pineapple, chopped
  • 1/2 apple, cored and chopped
  • 1 cup pomegranate seeds
  • 1/4 cup papaya, chopped
  • 4 teaspoons sugar (adjust to taste)
  • 1 banana, sliced

Method

  1. In a large bowl, combine the pomegranate seeds, pineapple, papaya, grapes, banana and chopped apple.
  2. Add the chilled yogurt and the sugar. Stir or whisk until the sugar dissolves and the mixture is smooth. For a thinner consistency, blend briefly or add a little cold water or milk.
  3. Stir in the paneer pieces if using. Serve immediately, garnished with a few extra fruit pieces or a sprinkle of pomegranate seeds for color.

Tips: Use ripe, flavorful fruit for the best taste. Adjust the sugar depending on the natural sweetness of the fruit. For a creamier texture, substitute part of the yogurt with chilled milk or a splash of cream. Serve the lassi cold and consume soon after preparing to preserve freshness and texture.
