Lassi is a traditional Punjabi beverage made from yogurt, water and sometimes spices or fruit. When prepared with fruit and sugar instead of spices, it becomes a fruit-flavored lassi. Ingredients
- 1 cup paneer (optional — can be omitted or replaced with a spoonful of cream for richness)
- 2 cups yogurt (curd), well chilled
- 10 green grapes, halved
- 5 pieces pineapple, chopped
- 1/2 apple, cored and chopped
- 1 cup pomegranate seeds
- 1/4 cup papaya, chopped
- 4 teaspoons sugar (adjust to taste)
- 1 banana, sliced
Method
- In a large bowl, combine the pomegranate seeds, pineapple, papaya, grapes, banana and chopped apple.
- Add the chilled yogurt and the sugar. Stir or whisk until the sugar dissolves and the mixture is smooth. For a thinner consistency, blend briefly or add a little cold water or milk.
- Stir in the paneer pieces if using. Serve immediately, garnished with a few extra fruit pieces or a sprinkle of pomegranate seeds for color.
Tips: Use ripe, flavorful fruit for the best taste. Adjust the sugar depending on the natural sweetness of the fruit. For a creamier texture, substitute part of the yogurt with chilled milk or a splash of cream. Serve the lassi cold and consume soon after preparing to preserve freshness and texture.
