This week’s blogging marathon falls on the last week of February and the theme I chose is “Bookmarked.” As part of the challenge I decided to prepare three dishes from other marathon participants who used the same theme. For day one I picked a simple, quick chocolate mug cake inspired by Sapana of Cooking with Sapana. Sapana is a talented home cook and baker whose recipes and photography always impress. I chose her microwave mug cake because my daughter Sruti is a confirmed chocoholic and will happily try any chocolate treat.

I wanted to make the cake fresh for Sruti and waited until she returned from school. Lately she enjoys cooking by herself — she even makes dosas for the family — and wanted to prepare this mug cake on her own. I couldn’t refuse, so I stood by to guide her through the ingredients and steps while she did the mixing. I adapted the original recipe slightly to match what I had in the pantry. Instead of fresh milk I used milk powder reconstituted with water, since that’s what was available. I reduced the amount of baking soda a little, which felt too strong for my taste, and I added a small pinch of instant coffee powder to deepen the chocolate flavor. Once the batter was mixed and transferred to the mug, I gave it a quick finish and heated it in the microwave. Sruti was impatient for me to take photos and wanted to dig in immediately. I served the warm mug cake with a scoop of my homemade mango ice cream (recipe to follow in another post). She loved the combination and enjoyed every spoonful.

Eggless Two-Minute Chocolate Mug Cake
This quick eggless mug cake is ideal for a fast chocolate fix. It takes only a few minutes to mix and about two minutes in the microwave. Serve it warm, with a scoop of ice cream or a dollop of whipped cream for a simple dessert.
Ingredients
- Flour (maida) — 3 tablespoons
- Granulated sugar — 2 tablespoons
- Milk powder — 1 tablespoon (mixed with 3 tablespoons water to replace liquid milk)
- Cocoa powder — 2 tablespoons
- Salt — a pinch
- Baking soda — 1/4 teaspoon (reduced from some versions)
- Instant coffee powder — 1/4 teaspoon (optional, enhances chocolate flavor)
- Water — 3 tablespoons (or milk if available)
- Oil — 3 tablespoons
- Vanilla essence — 1/2 teaspoon
- Chocolate chips — for topping (optional)
Instructions
- In a microwave-safe mug, combine all the dry ingredients: flour, sugar, milk powder, cocoa, salt, baking soda and instant coffee powder. Stir thoroughly so the dry ingredients are evenly mixed.
- Add the liquid ingredients — water (or milk), oil and vanilla essence. Mix well until you form a smooth, thick batter with no lumps.
- Fill the mug only up to half of its capacity. Overfilling may cause the batter to overflow while cooking.
- Top with a few chocolate chips if you like.
- Place the mug in the microwave on the highest setting and heat for approximately two minutes. Microwaves vary in power, so check after 1 minute 30 seconds; mine was done in about 1½ minutes.
- Use a toothpick or a small skewer to test doneness. If it comes out clean or with a few moist crumbs, the cake is ready.
- Serve immediately, warm from the mug, with ice cream, cream, or a dusting of powdered sugar for an easy and satisfying dessert.






This mug cake is a fantastic go-to recipe when you want dessert in a hurry and don’t want to fuss with many dishes. It’s ideal for single servings and is easily adaptable: swap oil for melted butter for a richer taste, or add a spoonful of jam or peanut butter in the center before microwaving for an indulgent surprise. The small addition of instant coffee really lifts the chocolate notes without making the cake taste of coffee, so it’s a useful trick when you want a deeper cocoa flavor.
