Spicy Rosemary Roasted Cashews, a delicious accompaniment to any spread!

The season is full of gatherings, long weekends and parties — which I love — but sometimes my husband and I just want a quiet night in. For a recent cozy date night at home I put together a simple finger-food platter and made a batch of these spicy rosemary roasted cashews to snack on.
I picked up a few premade items from the grocery store, but roasted the cashews myself. They’re quick to prepare, great for nibbling during a casual evening and make a thoughtful homemade gift if you want to share them. We enjoyed them so much I’ll be making another batch soon.
Of course a little sparkling wine made the night even better. Gloria Ferrer was our choice — smooth, tasty and a lovely alternative to Champagne at a more approachable price point.

Gloria Ferrer Caves & Vineyards, founded by the Ferrer family of Spain, is Carneros’ original sparkling wine house. The winery opened in 1986 in southern Sonoma County and consistently produces wines that punch above their price point in smoothness and flavor.

For our tray I served the rosemary roasted cashews alongside marinated olives, Colby Jack cheese, spicy pickles and hummus with an assortment of crackers. A few fresh cranberries and rosemary sprigs added a festive touch.

Rosemary Roasted Cashews
Ingredients
- 8.5 oz roasted cashews, lightly salted
- 2 teaspoons fresh rosemary, minced
- 2 teaspoons unsalted butter
- 1 teaspoon maple syrup
- 1/4 teaspoon chipotle powder
Instructions
- Preheat oven to 375°F. Spread the cashews in a single layer on a sheet pan and bake 5 minutes just to warm them through.
- In a medium microwave-safe bowl combine the butter, rosemary, maple syrup and chipotle powder. Microwave 20 seconds, then whisk together. Toss the warm cashews with the butter mixture until coated. Let cool and serve.
