Weekly Meal Plan for Monday — January 3, 2011

Here is the first menu plan of 2011. It feels great to be back into routine, even if I forgot half the items on my grocery list—typical, and a little frustrating.

Monday: Mexican chicken lime soup. We’ve had this before, and I’d forgotten how spicy it can be. It’s not suitable for C as-is, so I’ll be adjusting the recipe until it’s just right.

Tuesday: Asian BBQ turkey lettuce wraps. These haven’t been on the table in a while, and I was reminded how much we enjoy them, so they’re on the plan for Tuesday.

Wednesday: French dip sandwiches. A simple, delicious midweek meal—easy to put together and always satisfying.

Thursday: Chinese chicken spaghetti. We haven’t had this in ages; Andy will be happy to see it back on the menu. I also want to retake the photo of this dish someday.

Friday: Pizza. I love that pizza signals the start of the weekend for us.
