This pumpkin cream cheese bread takes classic pumpkin bread up a notch. Spiced pumpkin batter is layered with a lightly sweetened cream cheese filling and finished with a crunchy brown sugar streusel. It’s a quick, oil-based loaf that stays moist and requires no stand mixer—just a few bowls and a whisk.

Why this is an outstanding pumpkin bread
There are countless pumpkin bread recipes, but this version stands out because it layers flavors and textures for a more memorable loaf. The spiced pumpkin base is classic and comforting, while the cream cheese layer adds a silky, slightly tangy contrast. A crunchy streusel on top completes the loaf, balancing the moist interior with crisp texture. Together these elements create a refined but easy fall treat.
- No mixer needed: You can mix everything by hand with a whisk and a few bowls—perfect for quick weekday baking.
- Cream cheese layer: Lightly sweetened cream cheese adds a creamy ribbon through the center, giving each slice richness and balance against the warm spices.
- Brown sugar streusel: The streusel adds crunch and caramel notes, contrasting nicely with the moist, oil-based pumpkin crumb.
Tips for a perfect loaf
Follow these simple tips to get the best texture and flavor from your pumpkin cream cheese bread.
- Mix the batter just until the dry ingredients are incorporated. Overmixing develops gluten and can make the bread dense or chewy.
- Use pure pumpkin puree—not pumpkin pie filling. Pure pumpkin is plain pumpkin; pie filling contains added sugar and spices and will alter the recipe balance.
- Make sure the cream cheese is fully softened before mixing with sugar. Cold cream cheese can be lumpy; a quick whisk or brief hand-mixing will make a smooth filling.

How to assemble the loaf
Assembly is straightforward and quick. Line a 9 x 5-inch loaf pan with parchment paper, leaving an overhang on the long sides for easy removal, or grease and flour the pan.
Pour half of the pumpkin batter into the prepared pan and smooth the surface. Dollop and spread the cream cheese mixture evenly over that first layer, taking care to cover it completely. Add the remaining pumpkin batter on top and level the surface. Finish by sprinkling the brown sugar streusel evenly over the top. The loaf is now ready to bake.
How to tell when the bread is done
Start checking for doneness around 45 minutes, depending on your oven. Insert a toothpick or cake tester into the center of the loaf; it should come out with a few moist crumbs attached—not completely clean. You may see some cream cheese on the tester; that does not indicate the bread is underbaked. My oven finished at about 55 minutes, but baking times vary, so use visual cues and the toothpick test.
If the streusel starts to brown too quickly, loosely tent the loaf with foil for the remainder of the bake. Once removed from the oven, allow the bread to cool in the pan completely before lifting it out on the parchment overhang and slicing.
Using homemade pumpkin puree
Homemade pumpkin puree works well if canned puree is unavailable. Choose small sugar or pie pumpkins, halve and remove seeds, and roast cut-side down on a parchment-lined baking sheet at 400°F until the flesh is fork-tender—this can take 30–55 minutes depending on pumpkin size. Scoop the cooled flesh from the skin and puree in a food processor or blender until smooth. Store fresh puree in the refrigerator for up to a week or freeze in portions for longer storage.

Spice shortcut
If you don’t have every individual spice on hand, substitute 2 teaspoons of pumpkin pie spice for the cinnamon, nutmeg, ginger and cloves listed in the recipe. This keeps the flavor balanced without extra measuring.
Storage and freezing
Because this loaf is oil-based, it stays moist for several days. Store the bread covered on the counter for a couple of days or refrigerate for longer storage, making sure it’s tightly wrapped or kept in an airtight container. The loaf freezes beautifully: wrap it in plastic wrap, then foil, and freeze for up to three months. Thaw in the refrigerator overnight or at room temperature before serving.
