Ingredients

For the turkey legs:

  • 6 turkey legs, about 1 lb each
  • 2 tbsp neutral oil
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper

For the sauce:

  • 1-2 dried guajillo chilies, stems and seeds removed
  • 1 dried chile de arbol, adjust to taste
  • 2 cloves garlic
  • white onion
  • 1 medium tomato
  • 1 canned chipotle chili
  • ½ tbsp adobo sauce, from a can of chipotles
  • ½ tsp dried oregano
  • 1 tbsp butter
  • 1/3 cup hot honey
  • ½ tbsp apple cider vinegar
  • Salt and pepper, to taste

Instructions

  • Preheat your oven to 375°F (190°C). Prepare a large baking sheet by lining it with parchment paper or foil for easier cleanup and to prevent sticking.
  • Pat the turkey legs dry with paper towels. This helps the skin crisp and allows the rub to adhere. Rub each leg evenly with neutral oil so the spices stick and the skin browns.
  • In a small bowl, combine the chili powder, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well, then rub the spice blend all over the turkey legs, covering both sides for even flavor.
  • Arrange the seasoned turkey legs on the prepared baking sheet with space between them so air can circulate. Roast in the preheated oven for about 40 minutes to start developing a golden crust.
  • While the turkey roasts, prepare the diabla-style sauce. In a small pot, place the rehydrated guajillo chilies, chile de árbol, halved or chopped tomato, peeled garlic cloves, and the diced white onion. Add enough water to just cover the ingredients. Bring to a gentle simmer and cook for 12–15 minutes, until the tomato and chiles are softened and aromatic.
  • Transfer the softened chile and tomato mixture to a blender. Add the canned chipotle, adobo sauce, dried oregano, a pinch of salt, and 2–3 tablespoons of the cooking liquid from the pot. Blend until completely smooth. If the sauce is too thick, add a little more reserved liquid to reach a spreadable consistency.
  • In a small saucepan over medium heat, melt the butter. Stir in the blended chile sauce and simmer for 3–4 minutes to marry the flavors and reduce any raw edge. Add the hot honey and apple cider vinegar, then taste and adjust seasoning with salt and pepper. Simmer another 2–3 minutes until the glaze becomes glossy and thick enough to coat a spoon. Remove from heat and set aside.
  • After the initial 40 minutes of roasting, take the turkey legs out of the oven. Generously brush each leg with the diabla glaze, coating all exposed surfaces. Return the legs to the oven and roast for an additional 20–25 minutes. During this time brush with more glaze every 5 minutes to build a deep, caramelized coating. This repeated glazing creates a sticky, flavorful finish.
  • Once the turkey legs are deeply browned and the internal juices run clear, remove them from the oven and let them rest for 5–10 minutes. This resting period helps the juices redistribute and keeps the meat moist. If you like extra sweetness, drizzle with additional hot honey before serving. Serve warm, carving or pulling the meat from the bone at the table.

Notes

  • Use pre-trimmed turkey legs to save time. If your legs include extra fat or loose skin, trim those away before seasoning to promote even browning.
  • Adjust the number of chile de árbol peppers to control heat. One pepper gives a pleasant kick; add more for a spicier glaze. Always taste the blended sauce before adding hot honey so you can balance spice and sweetness.
  • Hot honey adds a distinct sweet-heat contrast that pairs beautifully with smoky chiles, but plain honey or a mix of honey and a touch of hot sauce will work as substitutes if hot honey is not available.
  • Leftovers keep well in the refrigerator for 3–4 days. Reheat gently in a moderate oven, brushing with reserved glaze to refresh the coating and avoid drying the meat.
  • For a slightly crispier skin, broil for 1–2 minutes at the end of cooking, watching carefully to prevent burning. Allow a brief rest after broiling before serving.
