I first tasted this pineapple salsa when my friend Heidi brought it to a gathering. It was an immediate hit, and I’ve been making it ever since. The combination of fresh pineapple, bright lime juice, spicy jalapeño, and fragrant cilantro creates a lively flavor that works equally well as a party dip or a topping for grilled proteins. Each bite is refreshing, slightly sweet, and just a little spicy—perfect for warm-weather gatherings or whenever you want something light and bold.

This particular batch was part of the appetizer spread for my husband Larry’s 40th birthday celebration. We filled the table with his favorite foods and treats. Our friend Rich smoked a mountain of pork and beef the day before, which we served on sandwiches with creamy horseradish sauce and an assortment of barbecue sauces. To complement the smoky meats and hearty sides, I included this pineapple salsa along with cucumber-and-feta yogurt dip, tomato-and-mozzarella skewers, and fresh fruit skewers. We also brought in mac and cheese and a cornbread salad from our favorite local barbecue spot. The salsa stood out as a bright, refreshing counterpoint to the richer dishes.

Heidi’s Pineapple Salsa

Ingredients:

  • 1 whole pineapple, diced small
  • 2 limes, juiced
  • 1 small can mandarin oranges, rinsed and drained, chopped
  • 3–4 jalapeños, seeded and diced small (adjust for heat preference)
  • Handful fresh cilantro, chopped
  • Pinch of salt and freshly ground black pepper

Directions:

  1. Combine all ingredients in a large bowl and mix gently to combine. Taste and adjust salt, pepper, or lime as needed. Refrigerate for 30 minutes to allow flavors to meld if time permits. Serve with tortilla chips or spoon over grilled chicken, fish, or tacos.

 

I love multigrain or sturdy tortilla chips for dipping; they hold up well and complement the salsa’s bright flavors.
