I planned to share a pumpkin recipe today, but I ran into a slight delay with photo editing and pushed that post back a bit. In the meantime, try adding pumpkin to a dark chocolate chip banana bread — it’s a great trick — and then make this salad.

Shredded Brussels Sprout Salad with Cranberries and Feta

Crisp vegetables, creamy feta, and chewy dried cranberries come together with a bright Caesar-Dijon dressing for a salad that’s simple, satisfying, and perfect for winter. Serve it as a side or enjoy it as a light main — the recipe makes about two meal-sized portions or four side servings.

Ingredients

  • ½ zucchini, diced
  • ½ cucumber, diced
  • 10 raw Brussels sprouts (coarsely grated or shredded)
  • 2-4 TBSP dried cranberries
  • 2-4 TBSP crumbled or cubed feta cheese

Caesar Dijon Dressing

  • 1 TBSP Dijon mustard
  • 1 TBSP your favorite all-natural Caesar dressing
  • 1 tsp vinegar
  • 1 tsp olive oil
  • tsp salt
  • tsp dried basil

Instructions

  • Chop the zucchini and cucumber into bite-sized cubes. If using a large block of feta, cube it as well. Add these to a large mixing bowl.
  • Stir in 2 to 4 tablespoons of dried cranberries and the feta.
  • Using a box grater or cheese grater, coarsely grate the Brussels sprouts over the bowl, discarding the tough ends.
  • Whisk together the Dijon mustard, Caesar dressing, vinegar, olive oil, salt, and dried basil in a small bowl. Pour the dressing over the salad.
  • Toss lightly to coat everything evenly. Serve immediately or chill briefly before serving.
