I’ve always believed ice cream isn’t just for summer. I’ll happily make a milkshake or banana split any time of year—no season required. I’m not eating it outside in the snow (unless you are, in which case: bravo!), but I do keep my ice cream maker bowl in the freezer year‑round.

Right now I’m enjoying a green tea Bubbies Mochi Ice Cream I found at my local market, with a mango flavor waiting in the freezer. Today we’re taking a break from baking to sip on a creamy strawberry‑mango milkshake that’s as pretty as it is tasty.

Bubbies Mochi Ice Cream are bite‑sized scoops of ice cream wrapped in a sweetened rice dough. That chewy exterior makes them easy to hold and fun to eat, and they’ve been one of my favorite treats since childhood. My mother, who’s from the Pacific Islands, brought them home often; the mochi always reminded her of home, and they still do for me.

What I appreciate about Bubbies is the variety of flavors. Besides Strawberry and Mango, they offer Triple Chocolate, Matcha, Meyer Lemon, Blood Orange, and Strawberry Rhubarb. Many of the flavors are non‑GMO, kosher, and dairy‑ and gluten‑free, and there’s a vegan line coming as well.

The mochi add a delightful chewy contrast to this milkshake. For layered milkshakes, make the strawberry and mango shakes separately—there’s no need to partially freeze a layer first. Both layers are thick and blend together nicely; if you like, use a skewer to gently swirl them for a marbled effect.

Ingredients

Strawberry Milkshake

  • 1 pint vanilla ice cream
  • ½ cup strawberry jam

Mango Milkshake

  • pint vanilla ice cream
  • 2 cold mangoes, cut into cubes

Garnish

  • Whipped cream

Instructions

  • To make the strawberry milkshake: blend the vanilla ice cream and strawberry jam in a high‑speed blender until smooth. Transfer to a bowl and set aside in the freezer briefly to keep it chilled while you make the mango layer.
  • Rinse the blender quickly (no need to wash fully) and blend the mango milkshake: combine the vanilla ice cream and diced cold mangoes, blending until creamy.
  • Layer the strawberry and mango milkshakes in your cups. If desired, use a skewer to swirl the layers slightly for a marbled look.
  • Top with whipped cream and garnish with Bubbies Mochi Ice Cream. Serve immediately and enjoy!
