
When I need a quick, satisfying weeknight supper, my slow cooker is my go-to. A good slow cooker recipe means minimal hands-on time: you combine the ingredients, set the cooker, and hours later your home smells wonderful and dinner is ready to enjoy.
This Cheesy Tex-Mex Chicken is one of my favorites. It’s packed with Tex‑Mex flavor and works perfectly wrapped in tortillas or spooned over rice. With hearty additions like corn and black beans, it often doesn’t need many side dishes. The recipe is flexible — use a mild salsa to keep it kid-friendly or a hotter salsa if you prefer more heat.
The secret to the creamy, rich finish is cream cheese added toward the end of cooking. About 30 minutes before serving, stirring in cubed cream cheese melts it into the sauce and gives the dish a smooth, cheesy texture.
Short on morning time? Prep the night before: combine ingredients in the removable slow cooker insert, refrigerate, and in the morning simply place the insert in the cooker and start it. That small step makes coming home to dinner effortless.

INGREDIENTS
- 2 boneless skinless chicken breasts (use 2 if they are large)
- 24 oz jar salsa (or homemade)
- 1 packet taco seasoning
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1 (7 oz) can diced green chiles
- 8 oz cream cheese
- 1 tsp hot sauce (optional)
- Tortillas or steamed rice for serving
- Optional garnishes: shredded cheddar, green onion, lettuce, etc.
DIRECTIONS
- In the slow cooker, combine salsa, taco seasoning, black beans, corn, and diced green chiles. Add hot sauce if using.
- Add the raw chicken breasts and stir to coat with the mixture.
- Cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
- About 30 minutes before serving, cut the cream cheese into cubes and add them to the slow cooker. If cooking on high, reduce to low for the remaining 30 minutes so the cream cheese melts into the sauce.
- Remove the chicken, then shred or dice it with two forks or a knife.
- Return the shredded or diced chicken to the slow cooker and stir to combine with the sauce.
- Serve the Cheesy Tex‑Mex Chicken in warmed tortillas or over steamed rice. Top with shredded cheddar, green onion, lettuce, or any preferred garnishes.
