How to Make Berry Popsicles

  1. Place diced strawberries, 1/4 cup water and 2 tablespoons honey in a medium saucepan. Bring to a boil, then reduce heat and simmer for 2 minutes. Remove from heat, let cool slightly, and blend until smooth. Transfer the strawberry puree to a bowl; it should look pink.
  2. Rinse the pan and blender. Add blueberries, 1/4 cup water and 2 tablespoons honey to the pan. Bring to a boil, then simmer 2 minutes. Remove from heat, cool slightly and puree. Transfer the blueberry puree to a second bowl; it should look purple.
  3. In a medium bowl, whisk together the yogurt, 1/4 cup honey and lemon juice until smooth. Stir about 1/2 cup of the yogurt mixture into the strawberry puree and another 1/2 cup into the blueberry puree so each is slightly creamy.
  4. Layer the purees in your popsicle molds: one third strawberry puree, one third yogurt mixture, then top with blueberry puree. For variety you can reverse or alternate the order.
  5. Freeze the molds for 1 hour, then insert popsicle sticks. Return to the freezer and freeze for at least 6–8 hours or overnight.
  6. To remove popsicles, run the mold briefly under warm water to loosen them, then gently pull the popsicles free.
