Refresco de Mamey

Ingredients

1/2 of a large mamey, or 1 small mamey -
5 cups milk of choice, almond milk used here -
2 tsp vanilla extract -
2 tsp honey -
Ice, for serving
Instructions

Slice the mamey in half, remove the seed, and scoop the flesh into a blender.

Add the vanilla, honey, and half of the milk to the blender.

Blend until the mixture is completely smooth and creamy.

Pour the blended mamey into a large pitcher.

Stir in the remaining milk until well combined.

Serve over ice and enjoy immediately.
Notes
- Use very ripe mamey for the best flavor and natural sweetness; it should yield slightly to gentle pressure.
- For a warm, spiced note, add a pinch of cinnamon or nutmeg when blending.
- To chill quickly, use frozen mamey chunks or add a few ice cubes to the blender.
- This refresco can be prepared ahead and refrigerated for up to 2 days; stir or shake before serving.
