Ingredients


  • 1/2 of a large mamey, or 1 small mamey

  • 5 cups milk of choice, almond milk used here

  • 2 tsp vanilla extract

  • 2 tsp honey

  • Ice, for serving

Instructions

  • Slice the mamey in half, remove the seed, and scoop the flesh into a blender.
  • Add the vanilla, honey, and half of the milk to the blender.
  • Blend until the mixture is completely smooth and creamy.
  • Pour the blended mamey into a large pitcher.
  • Stir in the remaining milk until well combined.
  • Serve over ice and enjoy immediately.

Notes

  • Use very ripe mamey for the best flavor and natural sweetness; it should yield slightly to gentle pressure.
  • For a warm, spiced note, add a pinch of cinnamon or nutmeg when blending.
  • To chill quickly, use frozen mamey chunks or add a few ice cubes to the blender.
  • This refresco can be prepared ahead and refrigerated for up to 2 days; stir or shake before serving.
  • For a thicker texture, reduce the milk amount and blend with crushed ice.
