Sweetened with mashed banana and honey, they contain no refined sugar. The muffins always bake up soft and tender and make an excellent base for a variety of flavors and mix-ins.

Homemade Coconut Flour Muffins
These muffins are similar to almond- or gluten-free banana muffins but feel extra filling thanks to coconut flour’s high absorbency. Coconut flour soaks up liquid like a sponge, so this recipe uses more wet ingredients—eggs, coconut oil, coconut milk and honey—to create a moist, fluffy texture. The ingredient ratios have been tested to produce consistently reliable results, so follow the recipe for best outcomes.

- Coconut flour: Made from dried, ground coconut meat. It’s very absorbent, so don’t substitute other flours without adjusting the recipe.

Can I Prepare the Batter in Advance?
Because coconut flour absorbs moisture quickly, I don’t recommend making the full batter far ahead. You can, however, mix and store the dry ingredients in an airtight container for up to a week, then combine them with the wet ingredients just before baking.

These muffins are delicious plain but welcome mix-ins. Fold in 1/2 to 1 cup of chocolate chips, chopped nuts, dried fruit, or fresh berries before baking. Adjust mix-in quantity so the batter still fills the muffin cups about three-quarters full.
Can I Freeze These Muffins?
Yes. Once completely cooled, place muffins in an airtight freezer-safe bag or container and freeze up to three months. Thaw at room temperature for 1–2 hours or overnight. Reheat briefly in the microwave (20–30 seconds) or in a 300°F oven for 5–10 minutes if you prefer them warm.
Storage Instructions
For short-term storage, keep cooled muffins in an airtight container at room temperature for up to three days. Cooling completely before storing prevents excess moisture and sogginess.

How to Make Coconut Flour Muffins Step-by-Step

Stir the dry ingredients into the wet mixture until a thick, smooth batter forms. Do not overmix.

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. Bake 18–20 minutes, or until a toothpick inserted in the center comes out clean.

Remove from the oven and allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
