Thankfully the illness passed quickly, but it then caught my husband just after he returned from a 10-day business trip. I spent the weekend tending to him — comfort food, drinks and long naps were our routine. Lots of Saltines, bananas, sports drinks, and re-runs of television kept us moving toward recovery.

On a weekend when I’m feeling especially domestic I’d make a big batch, but sometimes a classic diner-style breakfast is the fastest route back to feeling normal. Other times, these little banana bites are exactly what I want.

Ingredients 

For the Donut Holes:

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/3 cup vegetable or canola oil
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed
  • 1/2 cup milk

For the Cinnamon-Sugar Coating:

  • 4 tablespoons unsalted butter, melted
  • 2/3 cup granulated sugar
  • 1 1/2 tablespoons cinnamon

Instructions

  • Preheat oven to 350°F (175°C). Lightly spray one 24-cup or two 12-cup mini muffin pans with baking spray and set aside.
  • In a medium bowl, whisk together the flour, baking powder, salt, cinnamon and nutmeg. In a separate large bowl, whisk the oil, brown sugar, egg, vanilla, mashed banana and milk until smooth. Add the dry ingredients to the wet and mix until just combined; do not overmix.
  • Using a tablespoon or a small cookie scoop, fill each mini muffin cup about three-quarters full. Bake for 10–12 minutes, or until a toothpick inserted in the center comes out clean.
  • While the donut holes bake, melt the butter in one bowl and combine the granulated sugar and cinnamon in another. Remove the mini muffins from the oven and let them cool for 2 minutes. Dip each warm donut hole in melted butter, then roll it in the cinnamon-sugar mixture to coat.
  • Serve the donut holes warm or at room temperature.
