Ingredients
- 5 to 6 cups savory chicken bone broth or any broth you prefer
- 1/2 cup yellow onion, diced
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 2 cups pasta (small shapes cook quickly)
- 1 tablespoon olive oil
- Fresh dill, minced, to taste
- Black pepper, to taste
Instructions
- Heat the olive oil in a soup pot over medium heat. Add the diced onion, carrots, and celery and sauté until the vegetables are tender. Smaller pieces will cook faster.
- Pour in the broth and bring the pot to a gentle simmer. Let it simmer for about 5 minutes to marry the flavors.
- Add the pasta and cook on low heat until the noodles are tender. Small-cut pasta like capellini or small shells cooks quickly.
