I made these little truffles as my Easter contribution to the blog.
They are gently spiced and naturally sweet, with a rich, nutty flavor from the walnuts. Adding grated carrot lets you reduce the amount of dates or raisins because the carrot adds natural sweetness—definitely a bonus.
At about 88 calories and 9 grams of carbs each, these are a guilt-free little treat.

Carrot Cake Energy Balls
These carrot cake–flavored energy balls are a delicious, no-bake snack that’s both wholesome and satisfying.

Ingredients
- ½ c. dates or raisins if using dates, soak them in hot water for about 10 minutes (I used about 10 Medjool dates)
- ½ c. raw walnuts
- ½ c. carrot finely grated
- ¼ t. salt
- ½ t. cinnamon
- ⅛ t. ginger dried
- ⅛ t. nutmeg freshly grated if possible
- ¼ t. lemon zest optional
- ½ c. unsweetened coconut shreds for rolling
Instructions

Pulse the walnuts in a food processor until they’re broken into small pieces.

Add the remaining ingredients, reserving the coconut for rolling.

Process until the mixture comes together and is evenly combined.

Pour the coconut into a small bowl.

Form the mixture into balls, then roll each one in the shredded coconut.

Place the balls on a wax paper–lined plate and chill in the refrigerator for a short time to set.
