Ingredients

Dry Ingredients

  • ½ cup coconut flour
  • ¼ cup oat fiber
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • cup low carb sweetener
  • ¼ teaspoon xanthan gum
  • ¼ cup sugar-free chocolate chips (add last)

Wet Ingredients

  • ½ teaspoon Stevia glycerite (or more granulated sweetener to taste)
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon vinegar
  • ¾ cup full-fat coconut milk

Instructions

  • Preheat the oven to 350°F. Spray a mini muffin pan with baking spray or line with paper liners.
  • Whisk together all dry ingredients (except the chocolate chips) in a medium bowl to break up any lumps.
  • In a separate bowl, mix the wet ingredients until combined.
  • Add the wet ingredients to the dry and beat with a hand mixer until fully combined. Fold in the chocolate chips, then let the batter rest for 5 minutes to allow the coconut flour and oat fiber to absorb moisture.
  • Divide the batter evenly among the mini muffin cups. Bake about 15 minutes, or until a toothpick inserted in the center comes out clean.
  • Makes 24 muffins at approximately 1.2g net carbs per muffin.
