Its versatility is unmatched: blend silken tofu into smoothies and creamy desserts, make vegan cheeses like feta, scramble firm tofu for a savory breakfast, or build hearty dinners such as curried tofu. Tips for Cooking Tofu
What type of tofu should I use?
Tofu generally comes in two main categories: silken and block tofu (firmness ranges: soft, firm, extra-firm, super-firm). Firmer tofu has had more water removed and works better in recipes that require texture and browning.
Silken tofu is ideal for purees, smoothies, creamy desserts, and chilled East Asian dishes. Firm tofu is a good all-purpose option for scrambles, pan-frying, stir-frying, or shallow frying. Extra-firm tofu holds up well for grilling, baking, stir-frying, and crisping. Super-firm tofu is best when you need a dense, compact texture—great for grilling or slicing into steaks.
How to improve tofu’s texture and flavor
Reducing excess water in firm or extra-firm tofu has two main benefits: better crisping and greater ability to absorb marinades and sauces. Here are three effective methods.
Press tofu. For firm or extra-firm varieties, pressing removes moisture so the tofu crisps and soaks up flavor. Wrap drained tofu in a thin towel or paper towels, place a heavy skillet or books on top (optionally with cans to distribute weight), and press for 10–30 minutes. Replace towels once if they get very wet.
Freeze tofu. Freezing turns the internal structure more porous, creating a chewier, more meat-like texture and improved flavor absorption. Freeze an unopened package for at least 8 hours, then thaw in the fridge overnight or speed-thaw on the counter for a couple of hours. Microwaving in short intervals can also defrost if needed.
Boil tofu briefly. If you don’t have frozen tofu, simmer cubed tofu in generously salted water for about 2 minutes. This firms the texture and helps the tofu take on sauces and seasonings better.
