The sugar-free dry rub combines warm spices like cinnamon and rosemary with savory notes from garlic and cumin. The mix gives the ribs a balanced, slightly aromatic profile that pairs beautifully with a low-carb BBQ sauce.

Can You Eat Dry Rub Ribs on Keto?

Yes. The key is to make a sugar-free dry rub at home since many store-bought rubs contain hidden sugars. This recipe’s dry rub is low carb and great on pork, chicken, or beef.

Tip: After cooking in the crockpot or Instant Pot, finish the ribs briefly on the grill or under the broiler to build a caramelized, slightly crisp exterior — it elevates the texture and flavor.

Ingredients needed for sugar free dry rub

The dry rub uses common pantry spices. For about 2–3 lbs of baby back ribs, you’ll need:

  • 1 tsp chili powder
  • 1/2 tsp cinnamon
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp dried rosemary
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • Salt and black pepper to taste

  • about 2.5–3 lbs baby back ribs
  • sugar-free BBQ sauce (optional, for finishing)

Cooking methods

These ribs are versatile — choose the method that suits your equipment and time.

Instant Pot

  1. Mix the dry rub spices in a small bowl.
  2. Cut the rack into sections of 2–3 ribs and rub the spice mix onto each piece.
  3. Add water to the Instant Pot and place the metal rack or trivet inside. Arrange the seasoned ribs on their sides on the rack.
  4. Lock the lid and set the valve to Seal. Cook on Manual/High for 30 minutes.
  5. When cooking finishes, perform a quick release and allow a couple of minutes to vent.

Crockpot

  1. Place about 1/2 cup of water in the crockpot.
  2. Rub the ribs with the spice mix and arrange them on their sides inside the crockpot.
  3. Cover and cook on High for 4 hours or Low for 8 hours, until tender.

Stovetop (if you don’t have a slow cooker or pressure cooker)

Bring a large pot of water to a gentle simmer. Add the ribs and simmer for about one hour, until tender. Remove, let cool slightly, then apply the dry rub and finish under the broiler or on the grill.

Finishing the ribs

  1. Preheat a rimmed baking sheet lined with foil.
  2. Transfer cooked ribs with tongs to the prepared sheet.
  3. Brush both sides with sugar-free BBQ sauce if using.
  4. Broil or grill for 3–5 minutes per side to caramelize the sauce and develop a crust.

Instant Pot directions:

  1. Add water to the Instant Pot, insert the metal rack, and place the seasoned ribs on their sides on the rack.
  2. Lock the lid and set the valve to Seal. Cook on Manual/High for 30 minutes, then quick release and allow a couple of minutes to vent.
  3. While the ribs finish, line a rimmed baking sheet with foil and set aside.

Crockpot directions:

  1. Place 1/2 cup water in the crockpot and arrange the seasoned ribs on their sides.
  2. Cover and cook on High for 4 hours or Low for 8 hours until tender.

When ribs are cooked:

  1. Transfer ribs to the prepared baking sheet with tongs.
  2. Brush both sides with sugar-free BBQ sauce if desired.
  3. Broil or grill for 3–5 minutes per side to caramelize.
  4. Serve hot with extra sugar-free BBQ sauce for dipping.

Notes

Cook times listed do not include time spent in the crockpot or pressure cooker. You can prepare the ribs and rub a day ahead for convenience.
