Ingredients

  • 2 medium sweet potatoescut into ½-inch dice
  • 1 cup carrotspeeled and cut into ½-inch dice
  • 1 Tablespoon avocado oil
  • 1 Tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ¼ teaspoon cardamom
  • 1 cup quinoadry (about 2 cups cooked)
  • ¼ cup golden raisins
  • ¼ cup slivered almonds
  • Zest and juice of 1 lemon

Instructions

  • Preheat the oven to 425°F and line a sheet pan with unbleached parchment paper.
  • In a large bowl, toss the sweet potatoes and carrots with avocado oil, garlic powder, cumin, cinnamon, sea salt, and cardamom until evenly coated. Spread the vegetables on the prepared sheet pan and roast for about 20 minutes, or until tender.
  • While the vegetables roast, bring 2 cups water and the quinoa to a boil in a saucepan. Reduce heat and simmer for about 15 minutes, or until the water is absorbed. Remove from heat and fluff with a fork.
  • In a large bowl, combine the cooked quinoa, golden raisins, slivered almonds, lemon zest, and lemon juice. Add the roasted vegetables and toss to combine. Serve warm or chilled.
